Fajitas
Grilled peppers and onions with halloumi, tortillas, guacamole.
Single batch — 2 servings (1 dinner each)
Ingredients
- 250gHalloumi
- 300g (2 large)Bell peppers
- 150g (1 large)Onion
- 5 (325g)Flour tortillas
- 1 tbsp (14g)Olive oil
- 150gGuacamole
- 80gLettrømme 17% (Tine)
- 100gSalsa
- 80gLettuce
- 1Lime
- 1 packetFajita spice mix
Instructions
- Slice halloumi into ~1cm thick slices. Slice bell peppers and onion into strips.
- Heat olive oil in a large skillet over high heat. Fry halloumi 2-3 min per side until golden. Set aside.
- In the same pan, add pepper and onion strips. Sprinkle fajita spice. Cook 5-7 min until charred and tender. Squeeze lime over.
- Warm tortillas in a dry pan or microwave (30 sec wrapped in damp paper towel).
- Serve everything on the table — tortillas, halloumi, grilled veg, guacamole, rømme, salsa, lettuce. Assemble your own fajitas.
