Fajitas

Grilled peppers and onions with halloumi, tortillas, guacamole.

Single batch — 2 servings (1 dinner each)

Ingredients

Instructions

  1. Slice halloumi into ~1cm thick slices. Slice bell peppers and onion into strips.
  2. Heat olive oil in a large skillet over high heat. Fry halloumi 2-3 min per side until golden. Set aside.
  3. In the same pan, add pepper and onion strips. Sprinkle fajita spice. Cook 5-7 min until charred and tender. Squeeze lime over.
  4. Warm tortillas in a dry pan or microwave (30 sec wrapped in damp paper towel).
  5. Serve everything on the table — tortillas, halloumi, grilled veg, guacamole, rømme, salsa, lettuce. Assemble your own fajitas.
