Sheet Pan Salmon

Salmon with roasted potatoes and broccoli, lemon, olive oil.

Single batch — 2 servings (1 dinner each)

Ingredients

Instructions

  1. Preheat oven to 200°C.
  2. Cut potatoes into 2cm cubes. Toss with half the olive oil, salt, pepper, garlic powder. Spread on a sheet pan.
  3. Roast potatoes 15 minutes.
  4. Meanwhile, cut broccoli into florets. Pat salmon dry, season with salt and pepper.
  5. After 15 min, add broccoli and salmon to the pan. Drizzle remaining olive oil over broccoli. Squeeze lemon over salmon.
  6. Roast another 12-15 minutes until salmon is cooked through and broccoli is charred at edges.
  7. Serve immediately.
