Sheet Pan Salmon
Salmon with roasted potatoes and broccoli, lemon, olive oil.
Single batch — 2 servings (1 dinner each)
Ingredients
- 350g (200g him + 150g her)Salmon fillet
- 500g (300g him + 200g her)Potatoes
- 300gBroccoli
- 2 tbsp (28g)Olive oil
- 1Lemon
- to tasteSalt, pepper, garlic powder
Instructions
- Preheat oven to 200°C.
- Cut potatoes into 2cm cubes. Toss with half the olive oil, salt, pepper, garlic powder. Spread on a sheet pan.
- Roast potatoes 15 minutes.
- Meanwhile, cut broccoli into florets. Pat salmon dry, season with salt and pepper.
- After 15 min, add broccoli and salmon to the pan. Drizzle remaining olive oil over broccoli. Squeeze lemon over salmon.
- Roast another 12-15 minutes until salmon is cooked through and broccoli is charred at edges.
- Serve immediately.
